Caramel Apple Pies


          When you hear the word “Autumn", you can't help but think of the smells of warm apple pie in your kitchen. These apple pies are super easy to make and they're perfect to eat on the go! It's a dream come true for any apple pie lover to bring on your morning commute. It'll keep you happy long enough to not run over all those infuriating drivers on i-90 in Chicago! If you have the time, you can make the crust from scratch! (I will have that recipe listed in a future blog post.) For this version, I used a pre-made rolled crust from my local Mariano's. 


Once your crust has thawed out, roll it out and cut them into little circles. To make them a mini hand-held version, I used a kitchen drinking glass to cut the perfect little circles. 

Werther’s Original Caramel Chews are the secret ingredient to these pies. To incorporate them into the hand-held pies, cut them into smaller pieces; less than 1/4th of an inch in size.

         Secondly, I start with the apple pieces. I try to put off cutting the apples, otherwise they start to turn brown if they sit out for too long. (If you want to precut them, you can drizzle lemon juice on them and keep them in a locked container in the fridge.) 

Lay out the circle “pie crusts” and use a kitchen brush to drizzle the egg mix before placing the apples and caramels. 


To create the egg mixture, you will need the following....

  • One egg 
  • 2 teaspoons of cinnamon
  • 3 teaspoons of sugar
  • 2 teaspoons of Vanilla... (click here to find my go-to Vanilla for EVERY single baking recipe)


The egg mixture works as a glue for your hand held pies, and add a sheen to your pies. This is what you will need to create your egg mixture glaze....

To enclose the top half of the pie with the bottom half, I used an oyster fork to carve notches along the edges! You can use a regular fork to create a criss-cross design or pinched design.

Pre-heat your oven to 350 degrees and bake these mini pies for about 30 minutes. I brush the egg mixture on them before they go into oven and then again about 20 minutes into baking.

This here.... Is my go-to secret ingredient for anything baking related... the Nielsen Massey Vanilla Paste. I use it in EVERYTHING!!! It makes a noticeable difference in everything I bake, even cocktails. If you luck out, you may sometimes find it in a Home Goods. 

I baked a fair share of these mini apple pies... And it’s safe to say that all 16 of them were gone in less than 24 hours! I love the smell of baking apple anything in the fall as the weather becomes cooler. What is your favorite fall recipe??
