Apple Oatmeal Cookies


Happy Tuesday!!! Tomorrow is “Bump Day” so I am taking that as a hopeful sign that Henry might come out! I have been trying everythinggggg to naturally induce. So I have resulted to my old baking skills in hopes that I’ll be standing for hours and he’ll just have to come out haha. Anyways, I had so many of you message me on Instagram about these cookies that I had to share the recipe. Some of you may know that my number one ingredient in recipes that I cannot bake without is the Nielsen Massey Vanilla Extract. This stuff is heaven.  My favorite has to be the Vanilla Bourbon Paste. It has a thicker texture and is very concentrated, so use smaller portions when baking or cooking. I linked all my favorite Nielsen Massey products below. They also make GREAT hostess/holiday gifts! I baked a smaller batch of these cookies using dried cranberries. My favorite ones are the orange infused cranberries from Trader Joes.   • 5 whole apples (diced finely) - my favorite is Honeycrisp
  • 4 cups instant oats
  • 1 stick of unsalted butter (softened)
  • 1 1/2 tablespoons of cinnamon
  • 2 tablespoons of vanilla extract
  • 2 eggs 
  • 3 cups of flour 
  • 1/3 cup of sugar

Keep in mind that the cinnamon, sugar, and vanilla measurements can be done to your liking. I like to use extra vanilla :) 

Preheat oven to 350*. Mix all of the ingredients using a rubber spatula or your hands. You can use your measuring scoop to scoop the batter onto the baking sheet. Bake each batch for about 10-15 minutes or until golden brown.
