Homemade Pies Featuring Nielsen-Massey & Williams Sonoma
With Spring weather in the air I can’t help but become impatient for summer to arrive.... And we all know what summer weather means... Barbecues, pies, and MORE pies!!! Today I will be sharing my favorite go-to strawberry and apple pie recipes. My hidden secret in all of my desserts? Nielsen-Massey Madascar Bourbon Vanilla Paste! I love using it in the recipes that don’t even call for vanilla extract. The Nielsen-Massey Vanilla family is a huge difference from your regular grocery store “vanilla”. I love the fact that you can see the vanilla bean seeds in each dish I bake.
When it comes to baking pies, this vanilla paste helps hold all the fruit together without having to add obscene amounts of sugar.

Apple, Strawberry, and Pear
Pie Crust Recipe
- 2 1/2 cups of flour
- 1 cup of unsalted butter (cubed)
- 1/2 cup of shortening
- 3/4 tablespoons of salt
- 8 tablespoons of water
- 1 tablespoon of Nielsen-Massey Bourbon Vanilla Paste
Combine all your dry ingredients in a separate bowl and mix with a fork. Next combine your butter, shortening, water, and Vanilla paste in one bowl. Combine both mixtures and use your hands to mix all the ingredients together. Be careful to not over work the dough!! Divide your mixture into 2 separate but equal parts and wrap tightly in plastic wrap. Refrigerate your mixer for 30-60 minutes.
If you choose to use pre-made crust, you can make it taste home made just by brushing on this mixture once you lay it out in your dish. (Click the link to purchase my favorite brush! It’s great for grilling too!!)
- 2 eggs (whisked together)
- 1 tablespoon of vanilla
- splash of lemon juice
- 1 teaspoon of sugar
I use this mixture to give my pies that shiny glaze. *Best trick is to brush the mixture halfway through baking your pie.
If you don’t own a mandolin to slice your fruit thin, you can pre-soak them in a sugar, vanilla, and water mixture for about 5-10 minutes. I prefer using the Vanilla Paste over regular liquid extract because it helps the fruit stick together!
